This dip is a big hit at every work party. Every time. I get compliments all day.
I alternate between bringing this and my crockpot buffalo chicken dip. That one's coming in a future article. This is the one I made for a party at work today.
It's fresh ingredients, and it's so easy. About 10 minutes of prep. The hardest part is chopping up the artichoke hearts — and honestly, you could skip that. I just like them smaller.
The secret is the fresh spinach. Not frozen. Fresh.
How it goes together
I start it in the morning while I'm getting ready for work. Crockpot on low, both blocks of cream cheese in the bottom — no need to cut them up, they'll melt. Add all the spinach. If it won't all fit at once, add half, wait about 20 minutes until it wilts, and add the other half. Then the artichoke hearts, sour cream, mozzarella, and the seasonings, lid on, done. Stir it once, about 30 minutes to an hour in, and turn it to warm.
Getting it there
The crockpot rides to work in a cardboard box so it stays safe in the car, with two pieces of tape on the lid so nothing spills. Get to work, plug it in on warm, and it's perfect until the party starts.
The recipe
The dip
Cream cheese, 2 (8 oz) blocks — I use the cheap kind from Aldi's, any brand works
Fresh spinach, 1 bag
Artichoke hearts, 1 jar, chopped — Aldi's has a garlic and seasoned kind, that's my usual
Sour cream, about 1/2 tub
Mozzarella, 1 bag shredded
Season it
Salt, 1/2 tsp
Pepper, 1/2 tsp
Garlic powder, 1 Tbsp
Onion powder, 1 tsp
Serve with chips or bread.
Directions
Crockpot on LOW. Both cream cheese blocks in the bottom — no need to cut them up.
Add all the spinach. If it won't all fit at once, add half, wait about 20 minutes until it wilts, and add the other half.
Artichokes, sour cream, mozzarella, seasonings — everything in. Lid on.
In 30 minutes to an hour, stir it all together.
Turn it to WARM. Done.
In a hurry? Start it on HIGH, then turn it down after an hour.
Fast. Easy. Delicious. That's the whole point.
